Paul and Steve Beam personally choose the ingredients for Yellowstone Select Kentucky Straight Bourbon Whiskey, which is a blend of two high-rye Kentucky straight bourbon whiskies—one aged four years and the other aged seven. The Beam brothers claim that the goal was to produce a “well-rounded bourbon — a spicy rye taste at first rounding out with caramel notes and a rich, brown sugar finish that highlights Kentucky tradition.”

The bourbon does, in fact, include fiery notes of cinnamon spice and rye toast, which open up to a tongue full of caramel, melting butter, and leathered cherry. It has a slightly tart finish with hints of cloves and caramelized brown sugar.

Shortly after the creation of Yellowstone National Park in 1876, the Yellowstone Kentucky Straight Bourbon Whiskey brand with an equally fascinating history emerged. Son of J.W. Dant, the renowned distiller J.B. Dant started distilling in the late 1800s, but he used a “log still” rather than the more common, but more costly, copper pot stills. Making a log still, which is a less expensive but still efficient method of distilling, involves hollowing out a tree trunk and filling the inside with copper tubing.

With the growing success of his Yellowstone brand in Kentucky, Dant was able to standardize his technique and buy several neighboring distilleries. Through this expansion, Dant was able to establish a closer working relationship with M.C. Beam, the famed Beam family, in the early 1900s. Throughout Prohibition, Dant and Beam jointly ran the Yellowstone Distillery, a network of facilities that produced Yellowstone-Kentucky Straight Bourbon Whiskey for “medicinal purposes”.

 

Although the Yellowstone brand was acquired by Diageo and Luxco in the 20th century, it eventually lost popularity. However, Luxco and the Beam family’s new Limestone Branch Distillery have recently brought the brand back to life by discovering an ancient Beam family recipe and working with Paul and Steve Beam to produce a fantastic bourbon that honors the original.

Bourbon is one of the quintessential American products; while it is primarily made in Kentucky, it may be manufactured anywhere in the country.

It needs to be bottled at 40% ABV or higher and manufactured with at least 51% maize. So why not give this timeless American recipe a shot?
