Following fermentation and distillation, the rye is matured for ten years, initially in brand-new American oak barrels and subsequently in used bourbon barrels. The rye’s characteristics are rounded out and somewhat sweetened by this ten-year aging process. At whistlepig 10yearold small batch rye Farm in Vermont, WhistlePig Straight Rye Whiskey is aged until it reaches 100 proof and is then hand-bottled blend Kentucky straight bourbon whiskey.

Notes on Tasting On Whistlepig 10 year

Allspice, ginger, nutmeg, clove, and a touch of honey are among the rich, heavy notes in the nose. It has a full-bodied flavor with hints of honey and cinnamon along with warm, flowery aromas. There are rye, toffee, and mint notes in the mid-palate. The finish is warm at first, with subtle vanilla and butterscotch overtones.

Their hard-working, rural 500-acre farm in picturesque Shoreham, Vermont, is the ideal setting for refining their blending and finishing trials, which will eventually result in a portfolio of rye whiskeys with a deep complexity.
