W&A Gilbey Co. was established in 1857 in a basement cellar located in London at the intersection of Oxford Street and Berwick. The firm, a wine and spirits retailer, had grown to Dublin, Belfast, and Edinburgh by the turn of the century and had one of the biggest inventories of maturing whiskey. Gilbeys started offering Redbreast, a 12-year-old whiskey, in 1912. The Chairman of Gilberys, a fervent ornithologist, is credited with giving the name, which was a reference to the Robin Redbreast, a kind of bird.
Today, Redbreast 21 Year Old Single Pot Still Irish Whiskey continues to pay homage to the legacy of Gilbey and its Irish origins. The whiskey is crafted from a marriage of malted and unmalted barley, which are milled and mashed before being triple-distilled through traditional copper-pot stills. The inclusions of unmalted barley in the whiskey’s mashbill, along with the tradition of triple distillation, are uniquely Irish approaches to producing whiskey.
Following distillation, the whiskey is matured in a combination of American oak casks that were previously used to mature bourbon and European oak casks that were previously used to mature Spanish Oloroso sherry. After a 21-year slumber, the redbreast single pot still Irish is bottled without the use of chill filtration. As a result, the whiskey has a:
NOSE
Rich dried fruit, nuts, and fresh tropical fruits all have a remarkable scent.
TASTE
Sherry nuttiness, toasted wood, soft vanilla, with a hint of Pot Still spices. The creamy texture is finished with hints of succulent luscious fruit.
FINISH
clings to Oak and Pot for what seems like eternity. It all started with the last bow from barley, followed by still spices.
In 2016, Whisky Advocate selected Redbreast 21-Year-Old Single Pot Still Irish Whiskey the Irish Whiskey of the Year.
