These barrels are only ever used in five-barrel batches, and their own mineral water from the storied Rosendale Mines of New York is used for non-chill filtration and proofing. This naturally occurring water source gathers in the enormous subterranean tunnels after being organically filtered via limestone. This water, which is a hallmark element of Widow Jane spirits, has an exceptionally high mineral content that amplifies the flavors found in the spirit.
