Masataka learned how to distill and blend whisky at some of Scotland’s most renowned distilleries by taking chemistry classes during the day and working as an apprentice at distilleries at night. After returning to Japan in 1920, Masataka created the nation’s first single malt whisky in just ten years.
Masataka established Nikka whisky Coffey malt Co. after relocating to Yoichi in 1934. Masataka started looking for another suitable area in Japan to establish a second distillery in 1960, as the Yoichi Distillery was filling up. Masataka discovered a broad woodland valley at the confluence of the Hirosegawa and Nikkawagawa rivers after a three-year search.
The Nikkawagawa River’s water quality and the natural humidity from the nearby hills and rivers made the ideal site for a second distillery, which he called Miyagikyo.
Nikka Coffey malt Japanese whisky is a single malt composed entirely of malted barley and is painstakingly created at the Miyagikyo Distillery. The grains are first ground and crushed at the distillery before passing through copper-pot stills, sometimes known as “Coffey” stills, which were brought in from Scotland in 1963. The stills’ age and design result in a more nuanced and delicious whisky than contemporary column stills. The whisky is aged in conventional wood casks after distillation.
Nikka whiskey Coffey Malt Whisky has an aroma of cinnamon, lemon and butterscotch, which gives way to an intoxicating palate filled with clove, coconut, orange marmalade and oak. The finish is soft, with hints of mint, grapefruit zest and potpourri nikka days whiskey.
