In the center of Dublin, Ireland, the Mitchell & Sons Wine Merchants Company was founded in 1805. At the beginning of the 1800s, the Mitchells marketed a variety of Irish whiskeys under the brand name “Spot.” The company’s habit of applying a spot of colorful paint to casks of varying ages gave rise to its term. Mitchell & Sons consequently offered whiskeys under the names Blue Spot, Yellow Spot, and Red Spot, however their best-selling brand was Green Spot.
Green Spot Single Pot Still Today In the center of Ireland, Irish whiskey is still made. Malted and unmalted barley are ground, crushed, and then distilled using a conventional pot still to create the whiskey. American oak barrels that were previously used to age bourbon (75%) and European oak barrels that were previously used to mature sherry (25%) are used to mature the whiskey after it has been distilled. The casks are combined and brought to proof after the whiskey has aged for eight or nine years.

In 2014, Green Spot Single Pot Still Irish Whiskey made its debut in the US. According to Jim Murray, author of the Whisky Bible, it is “unquestionably one of the world’s greatest whiskies” and was chosen the top spirit of 2012 by “Serious Eats.”
