The “five keys” emblem is widely seen throughout the Stitzel-Weller Distillery. Each key stands for a stage in the production of whiskey: grains, yeast, fermentation, distillation, and aging. Sword and Bow Kentucky Named for the blade shaft and elaborate bow handle that combined make up Stitzel-Weller’s renowned skeleton keys, Straight Bourbon Whiskey is one of the first releases in more than 20 years to use real whiskey made at the distillery.
Sword and Bow The solera-aging method used to create Kentucky Straight Bourbon is usually used to age cognacs, ports, and sherries. This is done in order to protect the valuable Stitzel-Weller original stock, which is mixed with other fine whiskies during the lengthy solera process, in which a number of casks are filled at various times over the course of many years. In fact, Blade and Bow Kentucky Straight Bourbon is the last liquid to be distilled at the original distillery and contains the oldest stock of whiskey still in existence.
A comparable volume of whiskey from the second-oldest cask in the solera is added to the oldest cask to make room for the whiskey that is being emptied and bottled. This cascade effect continues until the youngest cask in the solera is filled with new whiskey. Thus, no cask in the solera is ever completely empty. Furthermore, the average age and complexity of the younger whiskey gradually grow over time as it ages and cascades down the solera.
Sword and Bow The aroma of Kentucky Straight Bourbon is subdued and includes notes of citrus, mint, oak, and green apple. With notes of pears, figs, and apricots blended with cereal grains, the palate is a little fuller. Caramel, burnt wood, and cinnamon spice lead to a smooth finish.
