Yellow Spot 12 Year Old Single Pot Still Irish Whiskey

In the center of Dublin, Ireland, the Mitchell & Sons Wine Merchants Company was founded in 1805. At the beginning of the 1800s, the Mitchells marketed a variety of Irish whiskeys under the brand name “Spot.” The company’s habit of applying a spot of colorful paint to casks of varying ages gave rise to its term. Mitchell & Sons consequently marketed whiskies with the names Blue Spot, Green Spot, Red Spot, and Yellow Spot, the latter of which was last produced in the middle to late 1960s.

In the center of Ireland, Yellow Spot Single Pot whiskey Still Irish Whiskey is still made today. Malted and unmalted barley are ground, crushed, and triple-distilled in a conventional pot still to create the whiskey. After distillation, the whiskey is aged for 12 years in a mix of Spanish Malaga, Spanish sherry butts, and American Bourbon casks. This is how the Yellow Spot brand was always aged. Yellow Spot’s renownedly sweet taste comes from the addition of a single pot still spirit that has been matured in Spanish Malaga casks.

Yellow Spot Single Pot Still Irish Whiskey is bottled at 92 proof after the several barrels have been blended together. This is slightly higher than other traditional Irish whiskies, which are bottled at 90 proof.

Brian Nation, the master distiller of Midleton Distillery, the company that produces Yellow Spot Whiskey, says, “We have seen a renewed interest and growth in the category over the last few years,” adding that pot still whiskeys define the original flavor character of Irish whiskey. Red bell peppers, nutmeg, green tea, and luscious peaches from the Malaga casks are among the scents of Yellow Spot-Single Pot Still Irish Whiskey. Cloves, baked apples, milk chocolate, coffee, and creme brulee all contribute to the honey sweetness on the mouth. With hints of red fruits, barley, and toasted wood, the finish is dry and nuanced.

Yellow Spot One Pot Still, very little amounts of Irish whiskey were made available in the US in 2015. In 2016, the whiskey won Gold in the Wizards of Whiskey competition and was named the “Irish Whiskey of the Year” by Whisky Advocate.
