Concerning Jameson
“Jameson” is one of the most recognizable names in the Irish whiskey industry. John Jameson was born in 1740 into a family whose motto, “Sine Metu” (meaning “Without Fear”), was acquired by the family’s valor in battling pirates on the high seas in the 1500s. This is where the Jameson tradition began.
John Jameson was a living example of Sine Metu, and the courage of his forebears gave him the audacity to establish his own distillery in the late 18th century and to create the triple-distilling method of whiskey, which is currently the industry standard in Ireland. For someone born in the 18th century, John Jameson lived to be 83 years old. His descendants, John II, John III, and John IV, all carried on his tradition by running the distillery far into the 20th century.

Concerning Irish Whiskey
Irish whiskey was mentioned about a century before its Scottish brother, despite the common misconception that whisk(e)y was invented by Scots.
Irish whiskey originated when monks who were distilling perfume decided to make some minor adjustments to the recipe.
There aren’t many restrictions on what constitutes “pure” Irish whiskey; it can be created using a variety of grains and methods as long as it’s kept in wooden casks for at least three years and has an alcohol content of no more than 94.8%.
