Organic barley, wheat, and corn are used to make Garrison Brothers Texas Straight Bourbon Whiskey. “We get about 30,000 pounds of corn, wheat and barley delivered a month,” states Garrison. “The wheat comes from our own fields — we have 65 acres of wheat on the other side of the property.” Additionally, the barley comes from the Pacific Northwest, while the maize is gathered from nearby regions in Texas garrison brothers whiskey.
After the grains are delivered to the distillery, they undergo a four-day fermentation process after being mashed and ground. After fermentation, an old copper pot known as the “copper cowgirl” is used to distill the wash. The bourbon is aged in charred American oak barrels after distillation. “She was made as an experimental still,” Garrison explains, “for Wild Turkey Distillery.”The bourbon can extend into the wood because the char softens it. When the temperature rises, as it does in Texas, the bourbon will seep deeply into the wood and release the chemical compounds there.
Occasionally released, the Cowboy Bourbon continues to attract the attention of bourbon enthusiasts. They use some of their best barrels, hand-picked for a lengthier maturing period, for these releases. A few very exceptional barrels were kept aside by Master Distiller Donnis Todd and Dan Garrison, who allowed time to do its magic on them. The whiskey is bottled uncut and unfiltered at cask strength once it is judged to be ideal. This year, 6,440 bottles of the 131.3-proof bourbon were made; the first 1,000 were gone in two hours.
