Corsair Pumpkin Spice Moonshine
Bell distills malted barley and wheat to produce Corsair Pumpkin Spice Moonshine, a sweet malt whiskey that draws inspiration from pumpkin ales. He has special flexibility and control over the distillation process thanks to his 50-gallon, four-plate hybrid pot still, which was constructed to order by Vendome Copper in Louisville, Kentucky. Bell adds five pounds of fresh pumpkin, cloves, spices, ground cinnamon, and fresh ginger to the still’s vapor basket after the grains have been distilled. The whiskey is then distilled again. This gives the whiskey a distinct flavor, with rich, sweet notes of pumpkin and cinnamon coming after aromas of pie crust and malt.
There are no automated parts to Corsair’s little business; every bottle is filled, tagged, and then boxed by hand. “We make less in a year than a big distillery spills in a day,” explains Clay Smith, manager of the distillery at Corsair.

Concerning Corsair
Darek Bell, a master distiller of the Corsair Artisan Distillery in Kentucky, says, “I love whiskey, but I think it could be better.” Not the same. More intriguing. More creative. Bell is a renowned experimental distiller and mad scientist who graduated from the Bruichladdich Distilling Academy in Islay, Scotland. “Whisky Magazine” recognized Corsair Artisan Distillery the 2013 Craft Distillery of the Year and the 2013 Innovator of the Year, among other honors and achievements, since it first opened its doors in 2009.
According to Bell, a former homebrewer, “the paints usually consist of corn, rye, wheat, and malted barley when you look at the palette the distilling world uses.” In contrast, brewers in craft brewing employ hundreds of malts and adjuncts. Like a brewer, I believe that the quality of the components used in distillation determines the quality of the finished whiskey.

Notes on Tasting
Sweet and savory. scent of buttery brown butter and cinnamon. Pumpkin and nutmeg quickly replace the initial notes of whiskey and malt. lengthy conclusion.
