The 100 proof bourbon, bottled in Bond, features flavors of dried fruit and wood. About Industry Colonel Edmund Haynes Taylor (eh taylor jr)
Taylor acquired a tiny distillery on the Kentucky River’s banks in 1869. Taylor started remodeling and updating the distillery after naming it O.F.C. Distillery (an acronym for Old Fire Copper). He bought copper fermentation tanks, new grain grinding machinery, and distinctive columnar stills. Taylor also introduced a number of cutting-edge distilling methods during his tenure, such as maturing bourbon in climate-controlled rickhouses.
The vast majority of distilleries at the time were still not maturing their whiskey. Some distillers and sellers sweetened their bourbon with juices and syrups to make it more palatable, while others added tobacco and acid to give the whiskey its distinctive amber color.
Equipped with both political clout and distillation expertise, Taylor collaborated with Treasury Secretary John G. Carlisle to successfully enact the Bottled-In-Bond Act of 1897 (27 C.F.R. 5.21). According to the statute, a spirit that bears the labels “Bonded” or “Bottled-in-Bond” must have been produced by a single distiller at a single distillery within a single distillation season. The Act also mandated that bonded spirits be bottled at 100 proof and matured for at least four years in a federally bonded storage supervised by the US government.
